Amy and Ralph Rollins
Proprietors
The foundation of Castle Falls is built on decades of shared passion for food and hospitality, laid by owners Amy and Ralph Rollins.
Their culinary journey began right here in Oklahoma during their teenage years. Amy got her start at the unforgettable Casa Bonita Restaurant and then worked her way through high school and college at Heritage House Restaurant, while Ralph was honing his skills serving up classic burgers from the grill at the TG&Y in Shepherd Mall. These beloved local beginnings taught them a relentless work ethic, provided invaluable hands-on experience, and cemented their deep local roots in the community they still serve today.
That foundation of hard work and genuine care led them to their next great adventure. On their 15th wedding anniversary, September 23, 2004, Amy and Ralph purchased Castle Falls, transforming a dream into a unique reality.
Chef Matthew Marlbrough
Executive Chef
As the heart of our culinary operation, Chef Matthew brings over two decades of experience in the food industry to the Castle Falls kitchen. Since joining our team in April 2022, he has upheld our commitment to delivering true restaurant-quality dining for every event and guest.
Chef Matthew is ably assisted by his wife, Amber, whom we affectionately refer to as "Mrs. Chef." When they hang up their aprons, Matthew and Amber love spending time fishing and enjoying lake days with their adult children—a perfect complement to the high-energy demands of the kitchen.
For an unforgettable meal, guests often rave about his perfectly prepared filet or the comforting richness of his signature tomato bisque. Be sure to ask about these specialties when planning your menu!
A Note on the Jokes: Be warned—Chef Matthew has an entire trove of truly terrible dad jokes. We strongly advise against asking him for one, unless you enjoy maximum groans and minimal laughter!

Jacob enjoys creating, fixing, and finding better ways to do things. He loves learning new things and takes pride in making spaces and moments feel a little more meaningful. One of his favorite quotes is below and provides insight into his sense of humor.

With decades of experience in the hospitality industry, Marshall brings a standard of excellence and warmth to Castle Falls.
While his professional skills are top-notch, Marshall's distinct personality makes him a beloved part of the Castle Falls team. He's an avid reader and keeper of fascinating trivia, ready to share a cool fact about the world—or perhaps our historic grounds—at a moment's notice. He has a Black Belt in karate, and if you happen to catch Marshall in a quiet moment, you might hear one of his signature, groan-worthy jokes—the kind where you simply have to laugh despite the quality.
